A decade ago, most non-Korean readers could name one or two Korean dishes, usually bulgogi and maybe kimchi. Today the same reader has probably watched a K-drama character eat ramyeon out of a pot lid, seen a TikTok Fire Noodle Challenge, ordered a bulgogi burger without a second thought, or queued at Trader Joe's for frozen gimbap that sold out that morning. Several things are driving Korean food's moment at once: a wave of Korean film and television, a real wellness case for fermented food, and an appetite for cooking and eating together at the table instead of each person getting a separate plate.
This book is for that reader: curious, familiar with Korean pop culture, and hungry, but not yet sure what to order or why. Three ideas run through every entry. First, most Korean dishes have a specific history, with a named inventor, a documented year, or a war, famine, or factory that shaped the recipe, and that history is worth knowing before the first bite. Second, Korean food is made for sharing. Banchan side dishes arrive without being ordered and are refilled for free, mains are grilled or ladled at the center of the table, and a meal often ends with fried rice cooked together in whatever sauce is left in the pan. Third, spice in Korean food can be turned up or down. Nearly every dish in this book has a mild version or a milder cousin, so no one needs to be afraid of the menu.
